Italian Herb & Parmesan Roasted Veggies

I found this recipe on Pinterest and it looked amazingly good and healthy. It doesn’t link back to a website, so if this is your recipe please let me know so I can give you credit for it! 🙂

I made this to go with some oven roasted chicken and changed the recipe a little and added Italian seasoning.

Italian Herb & Parmesan Roasted Veggies:

Veggies – use whatever you have on hand. This is so versatile. You could use bell peppers, egg plant, cauliflower, tomatoes, and so much more. I went with zucchini, garlic, red potatoes (cut small), and baby carrots.

Seasoning – I used McCormick’s salt-free Italian seasoning, fresh cracked black pepper, and a sprinkle of sea salt. I don’t measure my spices. I just use the amount I know my family will like. Add as little or as much as you like.

Olive Oil

Parmesan Cheese

Directions:

Preheat oven to 350.

Drizzle olive oil on a stick free pan or lined pan. (Veggies will stick, so be careful)

Add veggies to pan and sprinkle with seasonings.

Bake for 35 minutes. Remove and sprinkle Parmesan cheese. Bake for additional 10 mins.

Enjoy!

This recipe does look good. This would be one that I believe I could get the grandkids to eat their veggies.
