Stews are one of my favorite meals on a cold, chilly night and this Hobo Meatball Stew is the perfect dinner for a winter night. With little prep work and a few ingredients you have an easy dinner the family will love. I love making this on busy nights and it makes great leftovers!
Enjoy as is or serve over rice.
Hobo Meatball Stew
A great dinner on chilly night. Dump everything into your slow cooker and dinner is hot & ready!
- 3 Medium Potatoes, peeled and cut in to ½ inch cubes
- 16 oz Baby carrots
- 1 Onion, Chopped
- 3 Celery, Chopped
- 12 oz Frozen cooked meatballs, any kind
- 1 can Condensed tomato soup
- 1 cup Water
- 1 Envelope onion soup mix
- 2 tsp Beef bouillon granules

Place the potatoes, carrots, onion, celery and meatballs in slow cooker.

In a bowl, combine the remaining ingredients and pour over meatball mixture.

Cover and cook on low for 8 hours or until the vegetables are crisp-tender.

You can mix up the veggies too. Add peas, green beans, or whatever else you feel like.
