There’s something about fall that screams home cooked meals and casseroles. There’s just something about cooler weather and the crisp fall air that makes me want to get in the kitchen and make lots of delicious foods. Now that the summer heat is cooling down I’ll be using my oven a lot more for one of my favorite things, casseroles. There’s nothing like a yummy casserole on a cool fall night. With the kids being back in school casseroles are something that are quick and easy to throw together and while they’re baking I can help the kids with their homework.
A lot of the casseroles I make use chicken or turkey, which are healthier options than beef. Foster Farms is my go to brand. One of my favorite things to cook with is Foster Farms Organic Ground Turkey. It’s a great substitute to ground beef and lower in calories and saturated fat, and is an easy substitute in any meal. I use it in a lot of dishes like chili, tacos, burgers, and casseroles and I like the taste so much more. Foster Farms Organic Ground Turkey is USDA Certified Organic, antibiotic free, and raised free-range on organic land. As with all Foster Farms products, Foster Farms Organic Ground Turkey is 100% natural with no added hormones or steroids. It is also 93% lean and is locally grown in California.
A family favorite lately has been Sloppy Joe Casserole. My kids can get picky, but they inhale this dish every time and always get excited when they see I’m making it for dinner. My favorite thing about this dish is that it can all be made in one pot, which means less dishes for me. It’s the perfect casserole when you want a quick and easy dinner.
Sloppy Joe Casserole
Ingredients:
1 pound Foster Farms Organic Ground Turkey
2-3 cloves garlic, minced
1/2 sweet onion, diced
1 can fiesta corn, drained
1 can Manwich Sloppy Joe Sauce
1 tbsp olive oil
8 ounces cheddar cheese, grated
16 ounces tater tots
salt and pepper
Directions:
Preheat oven to 450 degrees.
In a large oven safe skillet, add 1 tbsp olive oil and brown the ground turkey with the garlic, onions, salt, and pepper until the meat is cooked through. Drain the fat and return to the heat. Stir in the corn and Manwich.
Top with half of the grated cheese.
Arrange the tater tots in a single layer over the top of the cheese.
Bake for 20 minutes. Remove from the oven and sprinkle with remaining shredded cheese. Let cool for 5 minutes and serve.
*If you don’t want to put your skillet in the oven you can bake in a casserole dish. Place the ground turkey mixture into a casserole dish and then top with cheese and tater tots.
