Lazy Enchiladas are easy to make and you can feed a large or small crowd with them. This quick enchilada recipe is the perfect family dinner. There are so many taquito flavor varieties available that you can do a variety of different types of taquito enchiladas. You can use regular chicken or beef enchiladas or kick things up a notch with flavored enchiladas like Diablo or Southwest.
Lazy Enchiladas
Lazy Enchiladas or as I like to call them Taquito enchiladas combine frozen taquitos, enchiladas sauce, shredded cheese, and toppings to make a quick and easy dinner in under 30 minutes. You can use any frozen taquitos and canned enchilada sauce you like. Since this is a quick family dinner we’re using canned and frozen, but you could use fresh enchilada sauce and taquitos.
What Taquitos to Use for Lazy Enchiladas
You can use any frozen taquitos that you like. In my original recipe, I used the beef and cheese taquitos and in my updated recipe I used the chicken taquitos. You can use taquitos with cheese or without and the tortilla type for the taquitos doesn’t matter either since they can come in flour or corn.
What Enchilada Sauce to Use for Taquito Enchiladas
I like to use the canned Las Palmas brand of enchilada sauce for this recipe, but you can use any brand that you like. Canned, homemade, or from a packet that you make. Since this is a quick meal I opt for canned.
For beef taquitos, I would use a red enchilada sauce and for chicken taquitos, I would use a green enchilada sauce, but you can use whatever flavor combo you like best.
How to make Taquito Enchiladas
To make Taquito Enchiladas you’re going to need:
1 (10-oz.) can enchilada sauce (red or green)
1 package El Monterey Taquitos (12)
1 cup shredded 3-cheese Mexican blend
Garnishments of your choice – Green onion, black olives, sour cream, lettuce, tomato, guacamole, etc
Here’s how to make Lazy Taquito Enchiladas
Preheat oven to 375°F.
Spray baking dish with cooking spray.
Place taquitos into a baking dish and bake for about 10 minutes. You’ll want to crisp the taquitos up a little bit.
Remove the taquitos from the oven.
Pour a can of enchilada sauce over the taquitos.
Sprinkle shredded cheese over the taquitos.
Return to oven and bake for an additional 15 minutes.
Let cool for a few minutes and then serve them on a plate.
Top with whatever toppings you like with your enchiladas. Personally, I like lettuce, tomato, and sour cream.

- Bake taquitos for 10 minutes.
- Remove taquitos from the oven.
- Pour enchilada sauce over the taquitos
- Top taquitos with shredded cheese.
- Bake for an additional 15 minutes.
- Remove from oven and serve.
- Add whatever toppings you like.
