Easter Bunny Bark

Chocolate bark is a family favorite holiday treat. It’s easy to make, you can decorate or customize it however you want, and it’s yummy. It’s so easy that even the kids can help with stirring, pouring, and decorating.

I wanted to give our Easter bark more than just chocolate, sprinkles, and decorations so I added a layer of birthday cake bunnies to the bottom and it made our bark so yummy. If you haven’t tried Annie’s Birthday Cake bunnies you are missing out. I like to pretend I bought them for the kids, but I love to eat them too. Paired with some dunkaroo dip and they’re the perfect treat.

Our Easter Bunny Bark uses white chocolate and is swirled with pink, purple, blue, and green chocolate. It’s layered over a birthday cake bunnies and then topped with Easter icing decorations and sprinkles.

How to Swirl Chocolate

Swirling chocolate might look like it’s hard, but it’s pretty simple. First, you are going to lay down your base layer. For me, this is white chocolate. Pour it onto your surface, I like to use parchment paper, and then even it out. I like to use an icing spatula to even my chocolate out.

Then you are going to drizzle the other colors of chocolate you want to use over the main layer. To do this I like to add the melted chocolate to a Ziploc bag, cut the very end of a corner off, and drizzle it over the chocolate.

Then take a toothpick or skewer and swirl the chocolate together.

How to Store Chocolate Bark

Store chocolate bark in a cool, dark place like a pantry or in your fridge.

Chocolate bark is good for 2-3 weeks when stored in the fridge and about 4-5 days when stored at room temp.

How to Melt Chocolate

For this recipe, I use melting wafers and candy melts. To melt them I place them in a glass container and melt them in the microwave. Start with 30 seconds, stir, and then do 15-second intervals until fully melted. Make sure to stir well in between each turn in the microwave.

Now let’s get started on our Easter bark!

Easter Bark Ingredients

  • White Melting Wafers 2 10oz bags- I like to use the Ghirardelli Melting Wafers, but you can use whatever brand you like or chocolate chips. I find the Ghirardelli taste the best and melt very easily.
  • Candy Melts (Wilton) – I like to use these for the different colors. They’re similar to the melting wafers except they come in a lot of fun flavors and colors. Pick some colors you like. I went with pink, purple, green, and blue.
  • Icing Decorations – Easter Icing Decoartions are royal icing decorations used for cakes, cupckaes, and other holiday themed items. For our Easter Bunny Bark I used the bunny feet icing decorations and bunny face icing decorations. The bunny feet can be found other different brands, but I’ve seen them at Walmart and King Soopers with the Easter baking stuff.
  • Birthday Cake Bunnies – These make up the bottom layer of the Easter bark and give the bark a birthday cake/graham cracker taste.
  • Pretzels – These are used as wiskers for the bunny face.
  • Easter Sprinkles – Added deocration to the bunny bark. I used these Easter Sprinkles.

How to Make Easter Bark

Line a baking pan or sheet with parchment paper.

Line the baking sheet with Birthday Cake Bunnies. Place them on an even layer, but give them a little bit of space between each other so the chocolate can fully cover them.

Melt your white chocolate. I place mine in a glass measuring cup. Melt them for 30 seconds, stir well, and then do 15-second intervals until fully melted. Make sure to stir in between each microwave turn.

For the colored chocolate, I placed about 20 melting chips into a Ziploc bag and placed them in the microwave for 30 seconds. Give it a good finger mash and then do 10-second intervals until fully melted. Do this for each color. I placed all of mine in the microwave at the same time, just don’t overlap them.

Pour the melted white chocolate over the birthday bunnies and smooth the chocolate out into an even layer. I like to use an icing spatula to do this.

Cut the corner tip off the Ziploc bag and drizzle each color of chocolate over the white chocolate.

Take a toothpick or skewer and swirl the colors together.

Add your icing decorations, pretzels, and sprinkles.

Place in the fridge to chill for about 10 minutes.

Once hardened you can break or cut your bark into chunks.

Enjoy!
