I’ve been making pancake muffins like this for years and not only are they quick and easy, but they make the perfect amount of pancakes for our family.

Muffin Mix Pancake Ingredients

To make the quickest and easiest pancakes ever you’ll need just 3 ingredients, which you’ll probably have on hand already.

Muffin Mix – This recipe calls for packets of muffin mix. Either Martha White or Betty Crocker brand. They can be found in the baking aisle, usually near the muffin mixes. Use any flavor. Our favorites are the triple berry and chocolate chip (you can even mix them together for some extra yumminess, just double the milk and egg).

Egg – 1 large egg.

Milk – We use whole milk for this recipe, but you can use whatever milk (or milk substitute you like). You can even use buttermilk!

Tip: Add some fresh fruit to your muffins for extra flavor. Mashed Banana, Blueberries or other berries, or small diced apple. You can even add chocolate chips to other mixed like wild/triple berry or banana nut.

How to Make Martha White Muffin Mix Pancakes

You’ll mix your packet of muffin mix, either Martha White or Betty Crocker, 1 egg, and 2/3 cup of milk together.

Heat your skillet to medium heat and spray your pan with cooking spray or use a little bit of butter.

Pour about 1/8 cup of batter onto the skillet and cook until the top is bubbles. Flip and cook for another 1-2 minutes or until golden brown.

Enjoy with your favorite pancake toppings like fruit or syrup.

The mix makes about 7-9 pancakes depending on size.

The best thing about these pancakes is that the muffin mix comes in a variety of different flavors like chocolate chip, banana nut, apple cinnamon, berry, and more. Each flavor makes for delicious pancakes and they’re really cheap. I can pick up a package of muffin mix for $1 or less at my local Walmart or Dollar Tree.

Ingredients

  • 1 (6-7oz) package of muffin mix
  • 1 egg
  • 2/3 cup milk

Instructions

  1. HEAT nonstick griddle to 325°F or large nonstick skillet over medium-low heat.
  2. WHISK egg in a medium bowl. Stir in muffin mix and milk until large lumps disappear.
  3. POUR batter for each pancake onto hot griddle. Cook 30 to 60 seconds or until bubbles begin to break around edges and the bottom is golden brown. Turn and cook an additional 30 to 60 seconds or until golden brown

I used to make pancakes with muffin mix all the time. I couldn't tell you how long it's been since I have though.

My bf brought over a pkg of strawberry muffin mix, which reminded me of the pancakes I used to make.

I got a pkg of banana nut mix and googled how to make pancakes from muffin mix. The 1st recipe I came across said to just use the mix and milk. That didn't sound quite right. I was sure I used to add more than just milk. So, I clicked on this recipe. This sounds about right.

Idk why this recipe has less stars than the one with just milk. I always add extra walnuts to my banana nut muffin pancakes, since they don't seem to actually have nuts.
