This is another great recipe with buffalo chicken.
So good and not too fattening if baked…
From the picture you will see the first time I made these I used a rotisserie chicken. I shredded the breasts and mixed them with Franks Buffalo Sauce. I made my Buffalo Chicken after the fact, but you can use either method. I made them again with the buffalo chicken recipe listed and they were just as great.
Buffalo Chicken Rolls
Ingredients:
Egg Roll wrappers
Broccoli Slaw or Regular Cole Slaw
Blue cheese or cheese of choice
Buffalo Chicken or shredded chicken & buffalo sauce
Directions:
preheat oven to 400 degrees. Spray a cooking sheet with non-stick spray.
on a clean work surface lay 1 egg roll wrapper down.
on the diagonal right corner add 1 pinch or tablespoon of slaw mix, 2 pinches or tablespoons of chicken, and 1 pinch or tablespoon of cheese. (blue cheese is ideal, but since I’m not a fan I used monterrey jack).
Now it’s time to wrap them up!
Bring the bottom right corner up and over the filling to cover it completely and make it snug. Fold each side over to form an envelope, then roll the wrap almost all the way to the top. Wet your finger with water and moisten the top corner, then fold it over the roll, pressing to seal. Place the roll on baking sheet.
repeat steps with reaming rolls.
spray each roll lightly with cooking spray.
bake for 15-20 minutes or until crispy and brown.
cool for a few minutes and serve with ranch or blue cheese dressing.
(You could also fry these, just skip baking steps. Add to hot oil and cook 2-3 minutes each side)
Enjoy!!
These make GREAT appetizers or snacks. You could even make these ahead and freeze them.
To freeze. Make rolls according to directions, but stop at the cooking steps. Place rolls on a baking sheet and place in freezer for a few hours (so they don’t stick together). Once frozen place all rolls in a freezer bag. When your ready to cook them, just pull them out and cook per directions above.
For the slaw you could use broccoli slaw or cole slaw, both are located near the lettuce packages OR you could use thinly sliced celery and carrots.

Oh wow! I was just looking at egg roll wrappers yesterday, as I have a coupon, but put them back because I couldn't imagine what I could make with them. This recipe is perfect! My coupon is still good - whoppee I feel like I hit the jackpot!
