Most nights during the week I make a home cooked meal and I always try to make them balanced. Some days are crazy busy and other days I am tired after dealing with a toddler all day so a quick, but delicious dinner is a MUST! Bird’s Eye Vegetables are a staple in our home. I love the convenience of them and the great taste. Some nights all I need to make is meat and I let Bird’s Eye do the rest of the work with their Steam Fresh veggies and sides. Not only does Bird’s Eye provide delicious sides, but they have various Kid Friendly recipes on their website. I know one way to get kids excited about their dinner is to let them help cook. My toddler is finally at the age where I can let her help with cooking and I know this is a memory she will cherish forever.
There were so many recipes on the site, but once I saw the Green Monster Pizza I knew we had to make it. I don’t have many memories of cooking with my mom while growing up, but I remember making pizza on English muffins and it’s something I want to share with my kids. We use to make ours with pepperoni, but the broccoli is a nice healthy change. It’s a very kid friendly recipe. Not only to eat, but also for your kid(s) to help make. My daughter loved being able to put the sauce, cheese, and broccoli on the pizza all by herself. I did change a few things about the recipe, I used pizza sauce instead of crushed tomatoes and English muffins instead of bagels.
Green Monster Pizza Night
Ingredients:
- 1 box (10 oz.) Birds Eye® Chopped Broccoli, thawed
- 1 ¾ cups crushed tomatoes
- 2 refrigerated Lender’s® 100% Whole Wheat Bagels, halved
- 1 cup reduced-fat shredded mozzarella
Directions:
- Preheat oven to 425°F.
- Add tomatoes to a saucepan and bring to a boil; add broccoli, reduce heat and simmer for about 5 minutes.
- Equally divide sauce between the four bagel halves.
- Top bagels with 2 tablespoons cheese.
- Place on a baking sheet and bake for about 8 minutes, or until bagel is at desired crispness and cheese is lightly browned.
My daughter had fun helping me make the pizzas and when they were done we enjoyed our healthy dinner. She gobbled it all up and declared it “YUMMY!” These are the perfect addition to a family movie night or just a fun lunch or dinner idea and the broccoli is a healthy alternative to other not so healthy pizza toppings. Bird’s Eye also has sliced frozen peppers that would be great on this pizza.
