Keeping Weekend Breakfast Alive with Hungry Jack Funfetti Pancakes!

A few weeks ago I talked about the importance of having a family breakfast and how they can get lost in the hustle and bustle of work, school, and life. We’re still adjusting to life as a family of 4 vs 3 and with a newborn in the home things have been hectic to say the least, but one of the things I’ve been doing is family breakfast on the weekends. Hungry Jack sent over some of their seasonal products to help make our breakfasts delicious and easy and we’ve been putting them to good use!

Hungry Jack Funfetti

Family breakfast gives me and our 3 year old time to do something together since she likes to help me make breakfast. She’s still too little to cook, so she does important things such as putting the mix into a bowl, adding ingredients, and mixing and then I get to do the cooking. The sausage pancake balls I made last time were such a hit with her that I decided to keep up with the theme and this time we made pancake donut holes with our Funfetti Pancake Mix.

For this I use my cakepop maker, but you can fry them if you don’t have a cakepop maker.

Ingredients:

Donuts:

1 package of Hungry Jack Funfetti Pancake Mix

1 cup water

Glaze:

3/4 cup powdered sugar

1 tsp vanilla

2 tbsp milk

red & green food coloring gel

Directions:

Make pancake mix according to package. If using cakepop maker, scoop 1 tbsp of pancake mix into each hole. Cook for a few minutes.

While the donut holes are cooking we mixed up the glaze. Combine sugar, milk, and vanilla in a bowl until smooth. Divide into two bowls and add a squirt of each color to their own bowl and mix.

Take warm donuts and dip into glaze and then place on wax paper until cool.

3 Tips to bring back breakfast to your family:

1. Keep it Simple – You don’t have to go over board and create a fancy breakfast. Something as simple as frozen sausage and pancake mix is more than enough for a family breakfast. It will save you time, stress, and the family will still love it.

2. Make it Fun – Family time is all about having fun. While donut holes and sugary breakfasts aren’t a regular thing in our house, it’s nice to do them once in awhile for fun. Create a pancake bar with fun toppings such as whipped cream, chocolate chips, and fresh fruit. Or make something fun like donut holes with glaze!

3. Use paper plates – Yes, I know. Paper Plates aren’t eco-friendly, BUT sometimes they are a necessary evil and they make life so much easier. Use them them to help cut down on the amount of dishes you’ll have to wash later!
