El Monterey Taquitos are a staple in our house. Just pop them in the microwave and in a matter of minutes you have a delicious meal, so when they sent over a big box of their new taquito flavors we were just a little too excited. With flavors like El Monterey Shell Shockers in Nacho Cheese and Jalapeño Ranch flavors as well as El Monterey seasoned, battered taquitos in Southwest Chicken and Taco Beef & Cheese you just can’t go wrong. With the The Big Game just around the corner these are the perfect game day snack!
They’re easy to make and you can feed a large or small crowd with them and with so many flavors to choose from, everyone will be happy. Of course when our box of taquitos arrived we have to try them out, so we made several of each flavor and got to testing. This was our first time trying the new flavors and the hubs and I were very happy. The Shell Shockers nacho cheese was our favorite along with the battered taco beef & cheese, but they were all delicious, crispy, and full of flavor. Having the added flavors on the outside of the taquitos really adds to them and gives them that extra pop of flavor!
The hubs loves football and every year for the big game he goes all out and gets a bunch of different foods for us to snack on, taquitos just happen to be on the list and luckily I have those covered, but instead of eating plain taquitos I’ve been thinking of some fun ways to kick them up another notch for the big game. Some ideas include:
- Dipping them in hot queso
- Eating them with Salsa
- Eating them with Guacamole
- Eating them with Bean Dip
- Turning them into enchiladas
Taquito Enchiladas
Ingredients:
1 (10-oz.) can red enchilada sauce
1 package El Monterey Taco Beef & Cheese Taquitos (12)
1 cup shredded 3-cheese Mexican blend
Garnishments of your choice – Green onion, black olives, sour cream, lettuce, tomato, guacamole, ect
Directions:
Preheat oven to 375°F. Pour 1/3 of the enchilada sauce into a lightly greased baking dish. Arrange Taquitos over enchilada sauce. Top Taquitos with remaining enchilada sauce. Bake, covered, for 25 minutes or until heated through. The last 5 minutes of baking, top with cheese. Serve with garnishments of choice!
