Irish Apple Cake – The Perfect St. Patricks Day Dessert!

I can’t believe that St. Patrick’s Day is just around the corner and like many of you I’ll be cookin’ up a corned beef and cabbage dinner along with Irish soda bread. This year I also wanted to have a delicious dessert since it’s not only St. Patrick’s Day, but also little man’s 4 month birthday. He can’t enjoy cake, but we can and I wanted something that was a traditional Irish dessert, not something minty or colored green, so this Irish Apple Cake is the perfect end of the meal treat.

While on my shopping trip at Whole Foods I picked up a few of my missing ingredients for this Irish Apple Cake like granny smith apples, organic eggs, and a pretty new baking dish. Irish Apple Cake is a cross between cake, pie, and bread. It’s it’s like a moist spice cake/bread and the apples give it a nice tart zing. It’s wonderfully delicious and easy to make!

Irish Apple Cake

Irish Apple Cake

4 tablespoons butter, softened (room temperature)
1 cup granulated sugar
1 egg, beaten (room temperature)
4 granny smith apples, cored, peeled and diced (2 cups)
1/4 cup chopped walnuts
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup all-purpose flour

Directions:

Preheat oven to 350°F
Generously grease an 8-inch square cake pan.
In a large bowl, cream the butter and sugar together until light and fluffy.
Add the egg, apples, nuts, and vanilla and stir well.
Sift in the dry ingredients and mix well.
Pour the batter into the prepared pan and bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean.
Remove from oven and let the cake set in the pan for 5 minutes, then remove from pan.
Serve warm or at room temperature with whipped cream or vanilla ice cream.
