Whether we’re watching a big game, like basketball, or lounging around the house watching a movie one of our go to snacks for the family is Delimex tacos and taquitos. I’ve professed our love for Mexican food many times on the blog and it really is a family favorite. So much so that the kids are always fighting over the last taco or taquito and I end up having to make them share.
March is a pretty big deal for college basketball and since my husbands cousin plays on one of the teams it’s an even bigger deal in our house now. He’ll be watching all the games and we’ll be right there with him, watching and snacking!
I always head to Walmart to get our groceries and snack items and you can find Delimex tacos, taquitos, and tamales in the frozen food snack aisle. When you head out to your local Walmart to pick up your favorite Delimex items make sure to bring this $1 off on any TWO (2)* Delimex® Frozen Taquito products (Excluding Fruit Taquito Products) at Walmart coupon. I’m all about saving money when I shop and what better way to do that then with a coupon?! *coupon is valid from March 9th, 2015 through April 7th, 2015.
While tacos and taquitos are great on their own they do taste even better with something to dip them in so I like to serve these quick and easy queso blanco and guacamole dips with them. While the Tacos and Taquitos bake in the oven (they get crispier that way) you can whip up these 2 delicious dips and by time the tacos and taquiots are done baking you’ll be ready to get to snackin’!
First up we have the Queso Blanco dip. This 2 ingredient dip is done in a matter of minutes.
Ingredients:
- 1 can Ro’Tel
- 1lb White American Cheese (you can find this at the deli counter)
Directions:
- Drain Ro’Tel so all liquids are gone.
- Dice up cheese and add to a microwave safe bowl. Pour Ro’Tel on top.
- Add to microwave and cook for 5 minutes, stop to stir after 3 minutes.
- Once it’s all melted give it a good stir and serve along side Delimex Tacos and Taquitos!
- Optional: Garnish with some diced tomatoes and cilantro.
Next up is a very Easy Guacamole!
Ingredients:
- 4 ripe Avocados, peeled and seeded
- 1 ripe, medium Roma tomato, diced
- ½ cup cilantro leaves, chopped
- Fresh lime juice from 1 lime

1 jalapeno, seeded and chopped up

Salt, to taste
Directions:
- Cut avocado into large chunks and mash large bowl with a fork.
- Add remaining ingredients and blend gently.
- Optional – You can add all the ingredients to a food processor and give it a few pulses to make a smoother Guacamole or put it in a bowl and blend together gently for a chunkier Guacamole.
- Taste test and add more salt if needed
- Serve along side Delimex Tacos and Taquitos

My family loves Mexican food- especially taquitos. I never thought to make a dip for them. My kids don't like guacamole (I love it though). Maybe I will make them a cheesy tomato dip like yours. My kids do love cheese. Thanks for the idea!
