Pancakes are one of the kids favorite breakfasts and I’m not going to lie, it’s one of mine too. I mean, what’s not to love about fluffy pancakes with butter and syrup? But it’s not something that is very healthy and I try to limit how often the kids can have them. I’m always trying out and finding new ways to make their favorite meals healthier for them and when I saw a few recipes for Cottage Cheese Pancakes on the Daisy website I knew it was something we had to try.
Daisy is a brand I’ve been using for a while. We use their sour cream religiously and their cottage cheese. One of the reasons I love Daisy Cottage cheese is because they keep their ingredients simple. Their 4% regular cottage cheese has only 3 ingredients, is all natural and 100% pure, with no additives, preservatives, or added growth hormones it’s also an excellent source of protein, a good source of calcium, and gluten free. Daisy 4% original cottage cheese has 110 calories, 13 g of protein, and 4g total carbs per 1/2 cup serving.
Daisy Cottage cheese makes a great snack, breakfast, or addition to any meal. I whipped up some Whole Wheat Cottage Cheese pancakes for the kids and they were a huge hit. Not only do they have a healthier version of one of their favorite breakfasts, but I know I am serving them something that is packed with protein to help fuel their morning.
Ingredients:
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon fine salt
- 2 tablespoons sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 4 eggs
- 1 cup low-fat cottage cheese
- 1/2 cup milk
- 1-2 tablespoons butter
- fresh or frozen berries
- real maple syrup
Directions:
- Mix eggs, cottage cheese, milk, and vanilla, in a large bowl. Combine flour, sugar, salt, baking soda, and cinnamon in a small bowl. Stir flour mixture into the cottage cheese mixture until combined.
- Heat a lightly buttered griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
- Serve with fresh or frozen berries and real maple syrup.

These pancakes look delicious and healthy with the Whole Wheat and cottage cheese. I have had this cottage cheese before and it is so good. I love this recipe. Thanks for sharing.
