Strawberry Cheesecake Cupcakes – #JuneDairyMovies

Safeway is one of my favorite stores to shop at because they have such great sales and promotions. June is Dairy month and Safeway has a great promotion to go along with it. From May 30 – June 30, 2012, if you spend $40 on participating dairy products at Safeway or its affiliate stores you will receive two movie vouchers for Ice Age Continental Rift!

I am super excited about this because 1. I easily spend $40 a month on dairy products and 2. Our family loves the movies.

In order to get this deal you need to have a Safeway Savings Card. If you don’t already have one, signing up is quick and easy to do. You can sign up either In Store or Online.

You don’t have to spend the full $40 in one shopping trip, but as long as you spend it within the dates stated above you will get your movie voucher. Once you hit the $40 your voucher prints at the register and you can redeem it later on. (I’ll show you how to redeem it in another post.) The thing I love MOST about this promotion is that you can get the promotion multiple times!!! You can learn more about the deal at June Dairy Movies.

I was able to reach my $40 goal quickly buying things we eat all the time!

In honor of June Dairy Month I got a special recipe for you! My inspiration came from a bakery in San Francisco called Cako. They make these amazing Strawberry Cheesecake cupcakes and I’ve been wanting to make my own version for awhile, so here it is!

Directions

Cake:

1 box strawberry cake mix

Mix and Bake cake according to the directions on the box, making cupcakes.

Cream Cheese Frosting Frosting:

4 ounces unsalted butter, softened

4 ounces cream cheese, softened

2 cups powdered sugar

1 teaspoon vanilla extract

In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.

Graham Cracker Crumble:

1 tbsp butter

1/4 cup crumbled graham crackers

2 tbsp brown sugar

Melt a tablespoon of butter in a small bowl in the microwave.  Add brown sugar and graham cracker crumbs to melted butter and stir well.

Assembly:

Once your cupcakes are cooled, frost with cream cheese frosting and sprinkle graham cracker crumble.

For extra flavor you could put some strawberry jam in the middle of the cupcakes or put fresh strawberries on top.
