Ways to Bulk Up/Stretch Taco Meat on the Cheap!

Tacos are a staple in our house and I make them several times a month. They’re fairly cheap to make, healthy when made with the right ingredients, and everyone loves tacos! There are only 3 of us to feed, but since I also need to have lunches for hubby I try to find ways to stretch our taco meat so I don’t have to buy more ground beef or turkey. These are some ways to bulk up taco meat and still have them tasting delicious!

Tacos

1. Add a can of Rotel or tomatoes – Rotel is just tomatoes and green chilies. For under $1 a can it’s a great way to add to taco meat and it adds some great flavor.

2. Beans – I use whatever can of beans I have on hand – black, pinto, red beans. It really stretches the meat out, plus it’s added protein and beans are good for you.

3. Rice – I usually make Spanish rice to go with our tacos and sometimes I’ll just toss it into the taco mix. Rice is another cheap option and helps to stretch the meat out.

4. Veggies – Things like corn, bell peppers, onions, and zucchini are great veggies to add to tacos. They add great flavor, are fairly cheap, and are good for you. Plus it’s a great way to sneak veggies into a food kids like.
