I was going to do tacos, but when I got home we only had a few tortillas left. I had just gotten some lettuce for a great deal and thought &ldquo;TACO SALAD!&rdquo;<\/div>\n<div style=\"text-align: center;\">\n<p>I went to grab my taco seasoning from the cabinet and realized that I didn&rsquo;t have anymore. Oh, Crap! What do I do? I made this as a last ditch effort and it came out really good.<\/p>\n<p>Ingredients:<br>\n1lb ground beef or turkey<br>\nSalt<br>\nPepper<br>\nCajun Seasoning<br>\nFresh garlic<br>\nFresh Onion<br>\nFresh Bellpeppers (any colors)<br>\nLettuce<br>\n4-5 corn tortillas<br>\nCheese (your choice)<\/p>\n<p>Turn skillet to medium high and let it warm up. Put meat in hot skillet and season with salt, a little pepper, and cajun seasoning to taste. (I sprinkled it all to my liking and used a lot of Cajun seasoning). Add minced garlic, onions, and bell peppers (I added bell peppers later once I realized I had some). Cook until meat is done. Once meat is done cooking drain oil from pan.<\/p>\n<p>Cut up tortillas into strips and then small squares.<\/p>\n<p>Heat skillt on medium high heat until HOT. (I always toss one square in to see if oil is ready. The tortilla will cause oil to bubble if it&rsquo;s hot enough.)<\/p>\n<p>Cook for 5ish minutes or until tortillas are golden brown.<\/p>\n<p>Remove from oil and drain on paper towel. Sprinkle with salt (optional).<\/p>\n<p>All Done!<\/p>\n<p>I served mine on a bed of lettuce, (I tossed my lettuce in a little Italian dressing), ground beef, tortillas, cheese, and sour cream.<\/p>\n<p>You can also serve this with salsa and guacamole.<br>\nI would have used tomatoes but we didn&rsquo;t have any.<br>\nIf you don&rsquo;t want to make your tortilla strips you can use crushed up tortilla chips instead.<\/p>\n<p>The Cajun seasoning gave the meat great flavor and a little spice.
