This is so versatile. You could use bell peppers, egg plant, cauliflower, tomatoes, and so much more. I went with zucchini, garlic, red potatoes (cut small), and baby carrots.<\/p>\n<p style=\"text-align: center;\">Seasoning &ndash; I used McCormick&rsquo;s salt-free Italian seasoning, fresh cracked black pepper, and a sprinkle of sea salt. I don&rsquo;t measure my spices. I just use the amount I know my family will like. Add as little or as much as you like.<\/p>\n<p style=\"text-align: center;\">Olive Oil<\/p>\n<p style=\"text-align: center;\">Parmesan Cheese<\/p>\n<p style=\"text-align: center;\"><strong><em>Directions:<\/em><\/strong><\/p>\n<p style=\"text-align: center;\">Preheat oven to 350.<\/p>\n<p style=\"text-align: center;\">Drizzle olive oil on a stick free pan or lined pan. (Veggies will stick, so be careful)<\/p>\n<p style=\"text-align: center;\">Add veggies to pan and sprinkle with seasonings.<\/p>\n<p style=\"text-align: center;\">Bake for 35 minutes. Remove and sprinkle Parmesan cheese. Bake for additional 10 mins.<\/p>\n<p style=\"text-align: center;\"><strong>Enjoy!<\/strong><\/p>\n<p style=\"text-align: center;\">This is so delicious &amp; healthy.
